I have to admit, when I first heard about fish tacos, I was a bit skeptical. My good friend had vacationed in Alaska during the height of Salmon season, and had brought the idea back with her. After a dinner party where she debuted her simple recipe, I was completely sold and in love with the recipe. I experimented with the fish used finding that while I love the salmon taco, many people find the milder Tilapia version to be more palatable. As always, I had to find a way to make it full-contact, and the best place I felt was in the sour cream. Sour cream acts as a condiment in the recipe, not as an ingredient, so I wanted to pack as much flavor into it as possible. The cilantro enhances the fresh taste the sour cream naturally brings to the table, while the garlic and chili powder add a spicy kick to compliment the seasoning on the fish. Adding the mayonnaise in the mix adds a layer of richness that is absolutely a must try for everyone. Enjoy!

Fish Tacos

1lbs Tilapia

1 Taco Seasoning Packet

2/3 cup of Water

6oz Sour Cream

3oz Mayonnaise

1 Tbsp Cilantro (Dried)

1 tsp Chili Powder

1 Tbsp Garlic Powder

1 1/2 cup Shredded Lettuce

2 cups Shredded Cheddar Cheese

3oz Salsa

Taco Shells

Preheat your skillet over medium heat and add a tbsp of olive or vegetable oil. Place the tilapia in the heated skillet. Flip the tilapia to the other side when the meat becomes white and opaque around the edges(approx 2-3 minutes per side). Once it is finished cooking use your spoon to break the meat apart. Turn the heat down to low. Add in your seasoning packet along with the water. Stir constantly to incorporate the seasoning. Turn the burner off. Immediately add in 1/2 a cup of your cheese and stir. Allow the cheese to melt into the dish. This will act as a binding agent to keep the meat from crumbling and falling out of the shell. Remove the skillet from the burner and let rest for 2 minutes. In a bowl mix the sour cream, mayo, cilantro, chili powder, and garlic powder together. Assemble the tacos with the fish mixture, lettuce salsa, sour cream, and cheese.

I’m sure that question is on most everyone’s mind. With a restaurant on every corner and already prepared foods available nearly everywhere, many people have given up on cooking at home. Let’s face it. You have to spend time preparing the food, figure out what you want to eat way in advance, and even after your done eating, you still have to clean up after everyone. It seems like there are more reasons than ever to not turn on your stove. So why am I telling you that cooking for yourself is something you not only can do, but should do? I’m about to have a very serious talk with you. Yes, all of you. I’m talking to the stay-at-home dad, the single parent, the hard working wife, and all of the single people reading this. So open your mind, loosen your belt, and start pre-heating your oven.

Food. It is the center of our lives. It has been since the dawn of mankind. If you don’t think it is, just think of our holidays, our birthdays, our celebrations. Every single one of them revolves around a great meal. But not only on the special days, does food play an important role. Every single day we plan what we are going to eat. Whether it’s a family dinner, a diet plan we are trying, having some neighbors or family over, or just brown bagging it to save some cash, we think about food much more than any of us would like to admit. Not only that, but food is much more than just a good taste for that moment. It is the fuel for your body. What you eat will nourish and replenish your body as you go through your day. Food can comfort you on a bad day, warm you on a cold day, make you smile on a warm day, and fulfill you when it is shared with those you love. So, bottom line… food is very important to us.

Garbage in, garbage out!

When you put food in front of yourself or your loved ones, what are you giving them? Can you answer that? When you buy food at a restaurant or from a gas station convenience center, you are buying whatever they felt was best for your family, not what you felt was best. When you cook your own food, you prepare the ingredients, you wash the food, you season it as you would like, and most importantly, you keep out the things you don’t want in there. If you’re on a diet, you can choose not to put butter into a dish and instead use a healthy olive oil. If your loved one has high blood pressure, you can reduce the sodium. If you want your kids to not have a pound of sugar everyday, you can control that. But only if you are preparing the food. High Fructose Corn Syrup, Gum Acacia, Partially Hydrogenated Soybean Oil. Ever remember your grandmother cooking with those? I don’t either. When you choose to use good quality ingredients you choose yourself and your family. When you know what is going into your food, you are in control of how you feel and how you live.

Turn on the stove, and save your money!

How much do you spend on eating out at restaurants? How much does lunch at work cost you every week? Remember, when you buy food made by someone else, you are paying not only for whatever ingredients they choose to use, but also for labor. A hamburger at a moderately nice restaurant will cost you $7-$10. That is for one meal, on one day. For the same amount of money you could buy the ground beef, hamburger buns, tomato, lettuce and cheese to make four hamburgers. That is, you could feed a family of four, dinner for a night, on the cost of one hamburger at a restaurant. We will be showing you throughout our program, how you can cook yourself and feed four people a full dinner for less than $15 a night. Just think about it. If a family of four eats at home once a week for $15, instead of spending $50 to eat out, they will save almost $2,000.00 a year!! Now at the end of this year, which would you rather have, 52 receipts, or an envelope with $2000.00 in it? Easy answer isn’t it. Be on the lookout for our 4:15 section, and start saving your wallet!

Cooking as love

When you cook, it is an act of love. You are spending your time and energy making food and nourishment for yourself and loved ones. You are providing them with what they need. Think about your fondest memories and you will probably find many of them around a table, or in a kitchen. Cooking takes time to do, but it also allows you the opportunity to share your work with others. Whether they are cooking with you, which I highly recommend, or just dining with you, the time you share together in front of hot dishes you made, will be memories you and they keep for a lifetime. Get involved with it. Get your family or friends involved. Make a time of it! Have friends over and cook together. Teach your kids how to cook as a fun activity. Time spent cooking together is not time wasted, it’s time well spent.

Cooking as art

Cooking is not easy to fully master, but easy to learn. You may never learn how to cook everything, but you will learn to master your favorite dishes. Cooking is an art and a skill that is becoming lost by many. Knowing how to prepare food is a skill set that will only be beneficial to you and your family. Not only is it helpful, but it is also an expression of yourself. Everyone has their own style. You do to, and your food will show that. You may put a spicy twist on a pot roast, or a sweet and savory twist on a dessert. Have fun with it. It is your creation, just as if it were a painting or a novel. Write your own menu, and learn how to share you with others, through the art of cooking.

As you can see, whether it’s to save money, to share great times with others, or to be more healthy the reasons to cook for yourself are immeasurable. But don’t take my word for it. Try it out for yourself. We will be giving you recipes, tips, and pointers, to help you find the best deals, the best tastes, and the best times. Use this opportunity to try out cooking. Try it for a month and see if you don’t feel empowered, enriched, and even more enlivened about your food.
